Cooking Egg Cutlets:

Step 1: Cook the chicken eggs.

We put the eggs in a deep pan and fill them with running water so that it is above their level by about 3 to 4 centimeters. There we add one tablespoon of 9% vinegar and salt.
We put the pan with eggs on the stove, turned on to medium heat. After boiling, cook them hard boiled 10 - 12 minutes. Then, using a kitchen towel, remove the pan from the stove. We pour boiling water from it and fill the eggs with cold water so that they cool faster and clean better.

Step 2: prepare greens and breadcrumbs.

While the eggs are cooling, we wash green onions and dill under cold running water. Shake the greens over the sink from excess liquid, put on a cutting board and chop finely. We shift the slices into a deep bowl. Pour breadcrumbs into a deep plate.

Step 3: prepare the minced egg.

Now peel the cooled eggs. Rinse them under cold water from shell fragments and dry with paper towels.
Grate the eggs on a fine or medium grater in a bowl with chopped herbs. There we add sour cream, sifted wheat flour, semolina, salt and black pepper to taste.
Mix all the ingredients with a tablespoon to a homogeneous consistency.

Step 4: form the egg patties.

Then we pick up one tablespoon of minced meat. We lay it on the palm of your hand previously moistened in water and form an oval or round cutlet.
Wrap it in breadcrumbs and spread on a tray. In the same way, we form the remaining cutlets until the minced egg is over.

Step 5: fry the egg patties.

After we turn on the stove on medium heat and put on it a pan with 2 - 3 tablespoons of vegetable oil. After 1 - 2 minutes, we send the first batch of cutlets to the preheated pan.

Fry them on both sides until golden brown and lay on a large flat dish with a kitchen spatula. In the same way, we fry the rest of the patties, periodically adding vegetable oil to the pan.

Step 6: serve the egg patties.

Egg cutlets are served hot or cold. They can be served as a separate dish or with meat dishes. But the most ideal option - egg patties with sour cream and a salad of fresh vegetables - this is something divine! Enjoy it!
