Shrimp Fried Ingredients
- Rice "Jasmine" (boiled until fully cooked) 240-260 grams
- Shrimps (frozen, semi-prepared) 10-12 pieces (large)

- Sesame oil 2-3 tablespoons
- Purified water 150-200 milliliters
Vegetables and greens:

- Sweet pepper 1 piece
- 2 cloves of garlic

- Green peas (fresh) 6 tablespoons

Cooking fried rice with shrimp:
Step 1: prepare the pic.
Everyone knows for sure how to cook Jasmine rice, but if you forgot or did not have time to make it in advance, we will remind you. So, first we spread the grains on the countertop, sorted, poured into a colander, rinsed and left in the sink for several minutes.
Then we fold it into a small, preferably non-stick pan and fill it with purified water in the proportion 1: 1.5, that is, we need 100 grams of cereal per 150 milliliters of water to get 240-260 grams of the finished product. The features of Jasmine are that it does not need any excess liquid, in Thailand it is generally steamed, simply placed in special muslin nodules and suspended on a hook in a double boiler. Well, the usual saucepan is suitable for us, put it on medium heat and, as soon as the water begins to boil, reduce its level to a minimum.
Mix cereals once with a wooden kitchen spatula, then cover and cook for 18-20 minutes until soft, but so that the grains retain their integrity. After that, remove the rice from the stove, very carefully loosen the table fork and leave it covered for another 5 minutes or before use.
Step 2: prepare the shrimp.
Then we take the shrimp without unpacking, send them to a bowl with cold running water and leave them in this form on 10-15 minutes or until completely thawed. Then we thoroughly wash seafood from sand, dry it with paper kitchen towels and rid them of heads, shells, and also tails.
Step 3: prepare vegetables, herbs and other ingredients.
Now, using a clean knife, we get rid of garlic, a piece of ginger from the peel, green onions from the roots, and for sweet pepper we remove the stem and gutted it from the seeds. We wash these products under trickles of water, dry them with paper kitchen towels, take turns on a chopping board and grind them. The shape of the slices is not important, both straws and cubes are suitable, most importantly - the size of the pieces should not exceed 4-5 millimeters. We spread the vegetables with herbs on separate plates and put next to them fresh peas.
Then, in turn, we beat the chicken eggs and send the squirrels with yolks to one deep bowl. Beat them with a table fork to a homogeneous consistency, it’s not worth zealous, it’s rather light splendor. Then we lay out on the countertop all the other ingredients that will be needed to prepare the dish, and proceed to the next step.
Step 4: Cook the fried rice with shrimp.
We put on a medium heat a wide pan with a thick non-stick bottom and pour a little sesame oil into it. After a few minutes, when the fat warms up, throw off the chopped carrots into it and fry it for 3-4 minutes to softness. Then add sweet lettuce, peas to the vegetable and cook them for another 1 minute. Then we send garlic with ginger to the pan, and through 30 seconds and shrimp.
We cook everything together, constantly loosening with a wooden spatula about 1 minutes. We do not move far from the stove, it can burn! Then add rice to the pan, mix and fry over medium heat 4-5 minutes.
After that, we make a pit-deepening in the middle of all the ingredients and pour in slightly beaten eggs. We stand them in this form until they set, only after that we mix with the rest of the products until a homogeneous consistency.
Now we season the dish with sugar, as well as three types of sauce: oyster, soy and fish. Again, loosen everything and stand on the stove 2 minutes.
Next, remove the pan from the heat, cover with a lid and leave it alone on 4-5 minutes. Then we distribute the dishes in portions on plates, crush each with green onions and serve to the table.
Step 5: serve the fried rice with shrimp.
Shrimp fried rice is served hot as a full-fledged main course for breakfast, lunch or dinner. This miracle is served in portions on plates, previously decorated with fresh herbs. Such a meal is considered quite independent, but at will it is complemented with salads from fresh vegetables or with sharp or spicy pastes, for example, hazel, garlic. - at will, you can use only two types of sauce, but soy is fundamental, and the rest, fish, as well as oyster, are interchangeable;
- for the preparation of this dish it is better to take palm sugar, it gives all products a certain pungent flavor;
- rice should be cooked without adding salt, do not forget that the sauces indicated in the recipe are quite spicy;
- it is not necessary to purchase semi-finished shrimps, completely boiled peeled seafood is suitable, but in this case you do not need to fry them for 30 seconds, immediately add to the pan along with rice and peas;
- Of course, for frying it is better to take sesame oil, but if this is not there, do not worry, peanut butter is suitable or, in extreme cases, you can take refined vegetable oil.
