Cooking Mexican casserole with rice and chicken:

Step 1: Boil the chicken.

So, we start with the chicken, it needs to be boiled. Since we are not cooking soup and we don’t need a rich broth, we will lower this fillet into boiling water. To do this, put a pot of water in advance on maximum heat and, after boiling violently, add salt. Then we wash the chicken fillet under cold running water, put it in boiling water, reduce the heat to medium and wait for boiling again. After which you can measure the cooking time, the chicken can be cooked for 20 and 40 minutes, depending on the chicken itself. Therefore, after 30 minutes we taste the chicken: if it is still harsh - continue to boil, if soft, then we take it out of the water onto a plate and leave it to cool.

Step 2: Boil fig.

To make better use of the time while the chicken is being cooked, we will take care of the rest of the ingredients. Rice also needs to be boiled, so that it turns out friable. To do this, pour two glasses of rice into a deep bowl or plate, fill with running water and mix. Then carefully pour out the muddy water and pour the clear water again. After several rinses, the rice can be boiled. Pour into the pan 4 cups water, salt, add rice, mix and put on the burner.

Turn on the medium heat and after boiling, covering the pan with a lid, cook until fully cooked for about 20 to 30 minutes.

After 20 minutes, it is better to check the rice: see how much liquid is left and taste. If it is soft and does not crunch, then it is ready, if not, continue to cook.

Step 3: Grate the cheese and chop the greens.

Chicken and rice are actively boiled, so there is time to prepare cheese with herbs. Cheese is simply grated with large holes in any convenient bowl or plate. We wash the greens under running water, shake and lay on a cutting board. Then finely chop with a sharp knife and transfer to a separate plate. But what kind of greens to use, you decide. Both green onions and parsley, dill or cilantro will do.

Step 4: Chop the chicken.

We return to the chicken, it has probably already been cooked and has cooled slightly. So it's time to grind it. On a cutting board, cut the chicken fillet into pieces of arbitrary shape about 2 centimeters in size and put in a large bowl or pan.

Step 5: Mix the ingredients.

Add chicken and beans to the chicken (without juice). Then we shift the cooked rice, black pepper, oregano, salt.

Next, sauce with half the cheese and mix everything thoroughly until smooth.

Step 6: Form the casserole.

Preheat the oven to 190 degrees Celsius. Lubricate the baking dish with vegetable oil, not only the bottom, but also the sides (sides). And gently spread the rice mixture.

Using a kitchen spatula or a tablespoon, carefully compact everything, sprinkle with the remaining cheese and you can send the form to the oven.

Step 7: Bake the dish.
