Green beetroot soup with beef ribs and quail eggs

Ingredients for making green borsch with beef ribs and quail eggs.

  1. Beef ribs 800-1000 g
  2. Water 3 L
  3. Garlic 1 tooth.
  4. Allspice 2 mountains.
  5. Rice 80-100 g
  6. Potato 400 g
  7. 1 carrot
  8. Boiled quail eggs 20 pcs.
  9. Dill 1 beam.
  10. Parsley 1 beam.
  11. Chives 1 beam.
  12. Salt to taste.
  13. Sour cream to taste.

Cooking green borsch with beef ribs and quail eggs:

Pour 3 liters of water into the pan, put chopped ribs, allspice, garlic in it.

Bring to a boil, remove scale from the broth surface. We cook the broth for 1.5-2 hours, periodically remove the scale.

When the broth is cooked, add diced potatoes and washed rice, cook for 20 minutes.

Cut the peeled carrots into circles and send to the pan, cook for about 5-10 minutes, the carrots should be a little crispy.

Salt borsch to taste.

Add the quail eggs, cut into four parts.

Add pre-washed coarsely chopped sorrel, chopped greens.

Turn off the fire, do not cover tightly with a lid, let stand for 5 minutes.

Serve borsch with sour cream.
