Apricot jam cookies

Ingredients for Cooking with Apricot Jam

  1. Wheat flour 350 grams
  2. Butter (or margarine) 200 grams
  3. Potato starch 100 grams
  4. Icing sugar 100 grams
  5. Egg yolk 2 pieces
  6. Salt 1 pinch
  7. Apricot jam (or jam) to taste

Cooking cookies with apricot jam:

Step 1: knead the dough.

Mix powdered sugar, wheat flour, potato starch and salt together and sift through a fine strainer. Add egg yolks and cold butter or margarine. Knead your hands smooth and non-sticky dough very quickly.

When the mass becomes homogeneous, wrap it with cling film and refrigerate for 2 hours.
Important: You can prepare the dough in advance, for example, in the evening, then the next day you will only have to make cookies from it and bake them.

Step 2: roll out the dough.

Divide the well-chilled dough into two equal parts and roll into two flat layers.
Important: in order not to stain the countertop and everything around with flour, roll out the dough on parchment for baking, thanks to a special coating, nothing sticks to such paper.

Step 3: make cookies.

Cut round workpieces from one piece. These will be the lower parts of the cookies, their base.

Cut flowers, stars and petals from the remaining half of the dough. With these blanks we will cover cookies with jam on top. The main thing is that the blanks of all parts fit each other in size.

Step 4: bake cookies.

Preheat oven to 180 degrees, and place the cookie blanks on a baking sheet covered with parchment parchment. Put everything in the oven on 15 minutes. As soon as the dough is browned, remove it from the oven.

All billets must be baked separately from each other, while nothing needs to be connected, fastened, and so on.
After cooking, set the dough to cool at room temperature.

Step 5: collect cookies with apricot jam.

And now the most interesting part of cooking. Take round cookies and put thick apricot jam on them with a spoon.

Cover the jam on top with the curly parts of the cookie and slightly press. That's all! Now carefully transfer the finished cookies with apricot jam to a large plate, sprinkle with powdered sugar and serve!

Step 6: serve cookies with apricot jam.

Apricot jam cookies are a delicious dessert, so serve it with tea or other warm and aromatic drinks. I think that such cookies are relevant both in winter and in summer. Recipe Tips:

- To make apricot jam specifically for cookies, take 600 grams of ripe apricots and 150 grams of vanilla sugar. Rinse the fruit, remove the seeds and cut into small pieces, then mix them with sugar and cook, stirring, until the mixture is thick enough.

- Of course, you can use any jam or preserves, you can even make assorted dishes! The main thing is that the filling is thick enough and does not spread.
