Ingredients for cooking vegetables in the oven under cheese

Cooking vegetables in the oven under cheese:

Step 1: Prepare the onion.

Peel the onion, rinse with running water and cut into thin half rings or feathers.

Preheat in a pan 1 tablespoon olive oil and fry the onions over medium heat until soft. You need to cook all the time stirring, approximately, for 10 minutesnot longer. We need vegetables to become softer and gain transparency, no need to fry until crust.

Step 2: Prepare other vegetables.

While the onions are fried, prepare other vegetables. First, of course, rinse and dry them.
Zucchini and zucchini for cooking are taken young, with soft skin and small seeds. So you don’t need to clean them, just cut off the ends on both sides. In a tomato, you need to cut the stalk, then cut all the vegetables into thin circles.

Step 3: Bake vegetables in the oven under cheese.

Set the oven to warm up 190 degrees.
Place the stewed onions at the bottom of the baking dish. Generously salt and pepper it. Gently lay alternating rows of tomatoes, zucchini and zucchini on top. Let the circles of vegetables overlap each other, like scales. Sprinkle the vegetables with thyme (preferably fresh, but dried will work too).

Sprinkle grated cheese on top and put in the oven on 40-45 minutes. The cheese should melt completely and cover the vegetables with a delicious brown crust.
Serve vegetables baked under cheese immediately as soon as you remove them from the oven.

Step 4: Serve the oven-baked vegetables under the cheese.

I suggest serving vegetables baked under cheese as an independent dish, except adding pasta or mashed potatoes to them, but this is also optional, the dish turns out to be tasty and without that. But, of course, you can use vegetables as a side dish to chicken, for example, or to meat dishes.

- As spices, you can add garlic to vegetables. A pair of cloves will be enough, peel them, chop and sprinkle on vegetables, and then add the grated cheese on top.
