Step 1: knead the dough.
To build a water bath, you can take a double boiler or just use two saucepans, one smaller one on top, and a larger one on the bottom, filled with water. It’s nothing if one pan falls into another, and you have to keep it on weight, since this step of preparing the dough is very quick, you won’t get tired.
Boil water in the lower pan, while at the same time, mix eggs, honey, sugar and butter in the upper pan. When the water boils, reduce the heat to a minimum and place a saucepan with ingredients over the steam. Beat everything, heating until the sugar melts, and you will not get a homogeneous liquid mass.
Sift into a free plate 3 cups wheat flour. Add salt and soda to it. Mix everything with dry fingers.
Add the warmed mixture of eggs, honey, sugar and butter to flour, and then mix everything vigorously. You will end up with a sticky and fairly fluid dough. Continue adding the remaining flour until the dough is cooler, but it should still be sticky.
Transfer the dough to a surface abundantly sprinkled with flour and continue to knead it until soft and very slightly sticky. Be guided at this stage according to your feelings.
Step 2: prepare the filling.
Rinse the berries and remove tails, twigs, leaves and so on from them. Rinse the fruit in the same way, peel it if it is kiwi, for example, and then cut the flesh into small pieces.
Step 3: twist the tubes.
Divide the finished dough into 15 pieces, for this it is best to first divide the whole mass into 3 partsand then on 5 each of them. Roll all the pieces into balls, if you feel that some have turned out more or less than others, redistribute the dough. Avoid rolling balls on a floured tabletop, because they can take this flour more than necessary.
Now all you need to do is roll out each ball into a thin strip with a rolling pin, so thin that you can still wrap it without breaks.
Lay berries or pieces of fruit in the middle of each strip, one strip - one type of berries or fruits. And then wrap the dough in a tube, sealing up the edges too.
Step 4: bake the filling rolls.
Preheat the oven to 200 degrees in Celsius, place the straws filled with berries and fruits on a baking sheet covered with parchment. The blanks must lie seam down and at some distance from each other.
Bake the tubes in the oven for 16-20 minutes. The dough will turn out golden on top, and you can also notice how berries and fruits started to seep out, it's okay. After baking, let the tubes cool down at room temperature.
Step 5: collect the cake and grease it with cream.
Mix all the ingredients for the filling together, beat with a mixer and, if the tubes have not cooled, put the finished cream in the refrigerator, covering with a film.
When all the components of the cake are ready for the next stage - assembly, take a large plate and put on it the first 5 tubespour cream. Following is still 4 tubes with the filling. Cream again. Then a layer of 3 tubescream 2 tubes, cover them with cream, and put the remaining straw on top and pour the whole cake with sour cream again, leaving 1-1 / 2 cup cream.
As a result, the cake will not look very neat, to fix this, take two plastic sheets (these can be cutting boards, for example) and press them to the edges, forming an even pyramid. Fasten the sheets and send everything in the refrigerator for the night or on 12 hoursso that the dessert hardens in the form you need and is saturated with sour cream.
After the cake “Polenitsa” stays in the refrigerator overnight, remove it, remove the plastic sheets, cover with sour cream again, hiding all the imperfections, sprinkle the dessert on top with coconut or chocolate chips, and then serve it to the table.
