Ingredients for Cooking Baked Duck

Cooking Baked Duck:

Step 1: prepare the duck.

First of all, carefully prepare the duck! We rinse it under cold running water, dry it with paper kitchen towels to remove excess moisture, put it on a cutting board and pull out small feathers that remained on it after machine cleaning with tweezers.
Then we cut large pieces of fat near the tail, turn on the open burner over high heat and singe the duck carcass from all sides, thus getting rid of thin hairs, mainly located near the wings, legs and neck.

Again, we wash the duck under a stream of water, wipe it dry with a waffle towel and poke its skin with a toothpick in places where there is a lot of subcutaneous fat, which is the hips, breast and back.
Then we rub the carcass of the bird inside and out to taste with salt, not forgetting that salted sauces will be used in the marinade. After that, sprinkle it on all sides with black ground pepper, put it in a metal pan and leave it in this form on 15 - 20 minutes.

Step 2: prepare a spicy mixture.

Meanwhile, preheat the oven to 150 degrees celsius and cover a clean baking dish with a large sheet of aluminum food foil.

Also peel shallots and ginger root. We wash the vegetables under cold running water and dry with paper kitchen towels. Then we transfer them to a clean blender bowl with lime leaves, raw peeled cashew nuts and coriander grains.

We turn on the kitchen appliance at the highest speed and grind these ingredients into very small pieces. Next, add chili paste with garlic, turmeric, soy sauce, sesame oil and shrimp paste to the blender bowl.

Mix everything again until smooth, at medium speed. The result should be a fragrant thick dark brown mixture with a very strong smell of spices. We leave it in the bowl and proceed to the next step.

Step 3: prepare the duck for baking.

Using a kitchen brush, grease the duck with a spicy mixture from all sides, inside and out.

We shift it into the prepared form with the back down and connect the ends of the foil so that a pocket without slots is obtained.

Step 4: bake the duck.

Pour a glass of water into a mold, put the bird in a preheated oven on a medium rack and bake 4,5 - 5 hours. 10 - 15 minutes before the end of cooking cut the top layer of foil with kitchen scissors and hold the duck in the oven for the remaining time or cook it until golden brown.

After that, we put on kitchen gloves in our hands, rearrange the form with the fragrant bird on a cutting board, previously laid on the countertop, and let the duck stand at room temperature 12 - 15 minutes. Then with the help of two kitchen shovels we transfer it to a large flat dish and serve it on the table.

Step 5: serve the baked duck.

Baked duck served hot as the main course.

Any side dish can be offered such a dish, starting from all kinds of sauces and ending with mashed potatoes, salads, cereals from different cereals, baked vegetables or boiled rice. Enjoy it!

Recipe Tips:

- dried lime leaves will easily replace the leaves of lemon myrtle or zest of half a lemon;

- instead of sesame oil, you can use olive;

- if desired, the duck can be stuffed with raw fruits, berries or vegetables;
