Cooking a turkey pie:
Step 1: prepare the dough.
Pour ordinary and whole grain flour, salt into the middle bowl, spread the cold butter in the middle and, using the knife, chop it until we get a homogeneous mass. Attention: the mixture is crumbled.
When we reach the desired consistency, pour ice water into the container and immediately mix the ingredients well with clean hands, kneading the dough. Once all the crumbs form one whole lump, the dough is ready. We wrap it in cling film or a plastic bag and put it in the refrigerator to insist and freeze.
Step 2: prepare the turkey fillet.
We carefully wash the turkey meat under running water and, having shaken off excess liquid by weight, put it on a cutting board. Using a knife, we clean the fillet from veins, fat and film. Transfer the meat to a medium saucepan and pour a small amount of water, but so that the liquid completely covers the turkey.
We put the container on medium heat. When the water boils, foam will appear on its surface. Be sure to remove it with a slotted spoon. Then slightly add salt, mix well with a tablespoon and cook the turkey for 40-50 minutes until the meat is soft. Immediately after that, turn off the burner, and put the fillet with a fork on a plate and set it aside so that it cools completely.
Cooled boiled meat, using a knife, grind into small pieces.
Step 3: prepare the broccoli.
We wash the broccoli under running water and put it in a small bowl. Attention: if desired, you can pour the cabbage with hot water so that it undergoes heat treatment. Then we drain the water, and put the vegetable on a cutting board and use a knife to cut into small pieces. The processed broccoli are transferred to a free plate.
Step 4: prepare the onion.
Using a knife, peel the onion from the husk and then thoroughly rinse it under running water. We spread it on a cutting board and cut it into cubes with the same sharp inventory. The processed onions are transferred to a free plate.
Meanwhile, pour a small amount of olive oil into the pan and put it on medium heat. When the oil warms up well, make the fire less than average and pour the chopped onion into the pan. From time to time, stirring it with a wooden spatula, fry until tender golden color or transparency (as you like). Immediately after that, turn off the burner and proceed to the process of preparing the filling for the pie.
Step 5: prepare the filling.
Pour chopped broccoli and turkey fillet into a pan with onions. Using a wooden spatula, mix everything thoroughly and turn the burner back on to a small fire. When the filling is well warmed, simmer it 10 minutesstirring occasionally. After the allotted time, turn off the burner.
Step 6: prepare the cheese.
We grate hard cheese on a fine grater directly in a free saucer. For the preparation of the pie, you can use cheese of any kind to your taste.
Step 7: prepare a dressing for the cake.
Break the egg into a deep bowl and pour the cream. Using a fork or a hand whisk, mix everything well until smooth. After that add a pinch of salt, nutmeg and grated cheese. Again, mix everything thoroughly until a homogeneous mass is formed. Everything, refueling is ready!
Step 8: make a turkey pie.
So, the dough has already cooled sufficiently, so we take it out of the refrigerator, free it from the film and put it in a baking dish. Attention: To prepare the pie, I used a container with a diameter of 25-27 centimeters, so we try to choose the same shape so that there is no big waste of dough. Now with clean hands we stretch the test ball over the entire surface of the container so that it becomes thin in thickness. In this case, be sure to raise it to the sides of the form, and cut off irregularities with a knife. Thanks to whole grain flour, the dough is not sticky and crumbles well, so turning it into a thin layer in the form of a basket in a baking dish is a pleasure.
Now with the help of a tablespoon we put the filling into the “basket” and smooth it evenly throughout the bottom. We water everything with dressing and smooth it again with improvised inventory. We put the turkey pie in a preheated oven to a temperature of 180 ° C and bake for 45-50 minutes on the bottom shelf. That's when we get a crispy base and a golden baking surface.
