Cooking yogurt at home:
Step 1: prepare the milk.
First, pour the whole pasteurized or fresh cow's milk into a small saucepan, send it to a strong fire and heat to 90-95 degrees Celsius. Important: this product is not boiled and periodically check the temperature with a special kitchen thermometer! As soon as the snow-white liquid heats up, use a towel to remove the saucepan from the stove, put it on the countertop and cool its contents to 45-50 degrees.
Step 2: prepare the yogurt.
When the milk has cooled to the desired temperature, add a couple of tablespoons of yogurt yogurt to it, if not, then use fatty kefir or sour cream. Gently mix everything to a homogeneous consistency, pour into a sterilized liter or two-liter jar, cover it with a piece of sterile gauze, pre-folding the fabric in 2-3 layers, and set it to ferment in a dark warm place on 4 hours. If you prepare a drink in the winter, insist it near a warm battery, and if in the summer - on a glazed balcony, while the mixture can not be shaken and stirred.
We observe the fermentation time strictly according to the rules, if it is reduced, the yogurt will turn out to be too liquid, and if it is overexposed - sugary-acid. therefore after 4 hours close the jar with a clean plastic or metal tight-fitting lid, put it in the refrigerator for 8 ocloc'k and only after this you can take a sample from the drink.
Step 3: serve yogurt at home.
Yogurt is served at home chilled as a drink or used in the preparation of many dishes, for example, as the basis for sauces, pastries, jellies, puff desserts, casseroles. Also in this sour milk product, meat, poultry are marinated, stewed mutton, lamb, veal, pork, beef, chicken or duck and season salads. This drink is very healthy, quenches thirst in the summer and strengthens the immune system in the winter. Enjoy it!
Enjoy your meal!
